My beekeeping adventure started in the Spring of 2008.  Several hives now occupy my apiary (that’s a place you keep bees or basically my backyard). 
The honey is extracted, filtered and later bottled.  Spring and Summer varieties are available (while supplies last). My Spring honey is typically very light in color and my Summer honey can vary from amber to dark.


Honey can and will crystallize over time.  Different types can crystallize faster.  The honey is still good but may need to warmed up a little to bring it back to the liquid state.  This can be accomplished by placing the honey in a container of hot water and allowing it to set there until the honey warms.  Never boil honey.  Replace honey after several warming cycles since heat can slowly change the color and taste. 
Honey is best stored at 70º Fahrenheit in a tightly sealed container out of direct sunlight.
Children under one year of age should not be fed honey.
